Party Cake - From Barbara Van Scyoc
1 package of Duncan Hines Deluxe White Cake mix.
1 3.5oz pkg Instant Vanilla Pudding (not cooked variety)
1 cup milk
1 8oz pkg cream cheese
1 large can of crushed pineapple
1 8oz tub of Cool Whip (can use Lite)
1 7oz can (or 1/2 bag) Angel Flake coconut
Make cake according to package directions. Bake at 350 degrees
for 20 minutes in a 11x17x1 sheet pan. Cool cake on wire rack. If using alternate sized pan - follow baking directions on
Once the cake is cool, using mixer blend the pudding mix, milk and cream
cheese. Mix well, there will be some lumps. Spread on cooled cake. Then spread
the crushed pineapple over pudding mix.
Finally, spread the Cool Whip over the pineapple and sprinkle with coconut.
Store in refrigerator. Can be made one day ahead - tastes better the second day.
