A sampling of some of the great things we've had at Chapter Pot Luck lunches

Yummy Grahams - Karen Whiseman
 
1 box any flavor graham crackers
1 cup sugar
1 cup butter
1 cup chopped nuts - your choice
 
Line a cookie sheet with graham crackers, broken at perforations. Spread or spoon nuts evenly over all the crackers. Melt butter and sugar until dissolved. Spoon over crackers.
Bake 10-12 mins at 350.

Cranberry Walnut Salad - Hilary White
 
One .3 oz box sugar free orange jello
One .3 oz box sugar free cranberry jello
one can whole cranberry
one can crushed pineapple in natural juice
four stalks celery chopped
chopped apples (optional)
handful crushed walnut pieces

dissolve jello into 2 cups very hot water
add cranberries with fork and mix into jello
add pineapple with juice
add chopped celery and apples
chill about one hour and stir
sprinkle walnut pieces on top
chill several hours

Party Cake - From Barbara Van Scyoc
 
1 package of Duncan Hines Deluxe White Cake mix.
1 3.5oz pkg Instant Vanilla Pudding (not cooked variety)
1 cup milk
1 8oz pkg cream cheese
1 large can of crushed pineapple
1 8oz tub of Cool Whip (can use Lite)
1 7oz can (or 1/2 bag) Angel Flake coconut
 
Make cake according to package directions.  Bake at 350 degrees for 20 minutes in a 11x17x1 sheet pan. Cool cake on wire rack. If using alternate sized pan - follow baking directions on package.
 
Once the cake is cool, using mixer blend the pudding mix, milk and cream cheese. Mix well, there will be some lumps. Spread on cooled cake. Then spread the crushed pineapple over pudding mix.
 
Finally, spread the Cool Whip over the pineapple and sprinkle with coconut. Store in refrigerator. Can be made one day ahead - tastes better the second day.

Sinful Potatoes - Alison Simon-Kissel
 
1 lb Velveeta cheese
16 oz mayo
1 lb bacon, chopped and cooked until crisp, reserve drippings
1 bag southern style hash browns - thawed
 
Place potatoes in a 2 qt baking dish. Melt Velveeta and mayo together over low heat, stirring constantly. When completely combined add some of the bacon drippings.
Stir cheese mixture into potatoes. When well incorporated add the bacon and fold in carefully. Bake at 375 for an hour, until bubbly and somewhat brown on top.
